One thing I missed a lot when I transitioned as a vegan was a super creamy soup. Although I tried a few different concoctions with coconut cream and alternative milks, nothing has been as effective as… wait for it… potato!
This starchy little miracle gives any weak, watery soup such a creamy consistency you’d SWEAR there was real cream in it. The more potatoes added to your soup, the better, as you can always water it down afterwards if it’s too thick. Just add them with the rest of the veg and then blend afterwards once the veg is soft.
Even better, you won’t get that inevitable bloated feeling that comes with full-cream soups! Win-win.
