I’m really happy with this recipe as the finished product is super delicious and perfect when you fancy something sweet on Halloween but don’t want to gobble up processed treats.
You will need a mould for this but they’re generally pretty cheap to buy! You can get them in all sorts of halloween themed sets but if you don’t have time to order one, you can use really anything in a chocolate shape, like an ice freezing mould.
2 large bars dark chocolate (or any kind of vegan chocolate)
1/4 cup maple syrup
1/4 cup coconut oil
1/4 cup almond butter
2 tspn vanilla extract
Melt the chocolate over a medium heat and spoon a thin layer into the bottom of each mould.
Make the caramel layer by whisking the maple syrup, coconut oil, almond butter and vanilla extract together until smooth. Set aside.
Pop the mould with the chocolate layer in the freezer for 5 minutes so it can properly set, then take out of the freezer and spoon in the caramel layer.
Put in freezer for another few minutes.
Add the final layer of chocolate and pop in the freezer.
Leave in the freezer for another 10 minutes for the layers to set together, then remove the mould and gently pop out the chocolates.
And you’re done!
