As a vegan, you may find yourself making a lot of pasta. If that’s the case, then you need my pasta sauce recipe!
When I first went vegan, I just upended some tomato purée and passata with a little oregano into a pot and hoped for the best, but it just wasn’t the same.
Sure, you can buy pre-made vegan sauces, but when you can make a delicious sauce from scratch for a fraction of the price, why wouldn’t you?
- 1000g pack passata
- 4 chopped tomatoes
- 2 red peppers
- 1 green pepper
- 1 onion
- 2 tbsp tomato puree
- 2 tbsp garlic puree
- 2 tbsp soy sauce
- 1 tsp oregano
- 1 tsp turmeric
- 1 tsp cracked black pepper
- Dash of salt
Upend the packet of passata into a pot and cook on a low heat.
Chop the veg and put into the passata sauce.
Add herbs and seasoning and give it a stir.
Continue cooking until the veg is soft.
Blend if desired (though personally I like a chunky sauce!) and serve!
