This is a recipe I created kind of by accident! I didn’t have much in the house and I wasn’t sure what I could make with what I had. I craved a pizza but I didn’t have a base nor the money to order in, but I had remembered that some people make pizza out of wraps.
Generally tomato sauce is smeared on top and it looks just like a pizza, but it just didn’t seem that appetising to me, so instead I decided to make a pizza wrap! Let me tell you, it is DELICIOUS.
Pizza wrap ingredients:
- Tomato sauce (my recipe is here)
- Wholemeal wraps
- Linda McCartney sausages (or any vegan sausages)
- 1 large onion
- 2 bell peppers (one green, one red)
- Grated cheese (the Nature & Moi brand is delicious)
- Dash of oil
- 2 tbspn soy sauce
- Dash of smoked paprika
- Dash of turmeric
Cook sausages in the oven (LMcC sausages take approx. 12 minutes)
Heat up oil on a pan.
Chop onion and peppers into long strips and add to pan with soy sauce, smoked paprika and turmeric.
Heat the tomato sauce.
Heap tomato sauce over a wrap and spread it in a circle, leaving an inch of wrap free of sauce.
Put handful of the cooked veg in the middle of the wrap along with one of the chopped sausages.
Add more sauce if desired.
Sprinkle grated cheese on top and fold the wrap.
Spicy Kale Salad Ingredients:
- Wholemeal rice
- Chopped kale
- Dash of sweet chilli sauce
- Chopped lettuce
- 1 medium tomato
- 1 third of a cucumber
- Dash extra virgin olive oil
- Squeeze of lemon
- Chillies (seasoning)
Cook the rice and set aside.
Put chopped kale and chopped leaves of lettuce in a bowl with a dash of oil and a little lemon juice.
Dice the tomato and cucumber and add to the greens.
Sprinkle chillies over the veg and mix well.
Add rice to the salad and pour some sweet chilli sauce over it.
